1 can of pumpkin puree
2 tbsp coconut oil
1/3 cup Black Strap Molasses
1/4 cup Truvia sweetener baking blend
1 1/4 cup of oat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice
1 scoop of Whey Protein Powder (i used Cellucors Cinnamon Swirl)
1/4 tsp Ground Ginger
Mix together all wet ingredients, then add in the dry together to the wet without stirring until all is added. Then stir everything together!!!
Bake at 325 for 12 mins
I made mini muffins with my mini muffin tin! But you could make regular! If making regular size add 10 mins to the time above, and check muffins! Don’t forget to grease your muffin tin!!
This recipe made 30 mini muffins!
