Apple Upside-down Pancakes
1 cup of Oat flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 salt
1 Tbsp Truvia
2 tsp vanilla extract
1 egg
1/2 cup milk
2 tbsp coconut oil
2 apples
Melt 1 tbsp of coconut oil in a saute skillet over the stovetop. Saute 1 hugely large apple or 2 medium apples (finely diced) in a saute skillet over the stove. Sprinkle cinnamon and brown sugar over the roasting apples, stirring constantly. After a couple minutes of browning, set the apples aside. For pancake batter- mix together all dry ingredients, then add in the wet ingredients, stirring.Pour 1/4cup full of batter onto skillet, sprinkle apples on top, then wait for it cook fully until flipping. Makes about 8-10 pancakes.
