I had some BLACK RIPE Bananas that were on their way out the door, So I decided to do some quick baking!!! These muffins are great and super moist!!

2 ripe  large bananas

1 tsp vanilla

1 egg

5 packets of Domino Stevia/Sugar blend

scant  1/4 cup of Truvia Baking Mix (or omit for other sweetener)

2 tbsp of 0% greek yogurt

2 tbsp of Coconut oil (softened)

3/4 cup + 2 tbsp of oat flour

1/2 cup of Cinnamon Swirl Whey Protein

1 tsp of baking soda

1 tsp of baking powder

1.5 tsp of cinnamon

1/4 tsp of salt

1/4 cup of chopped Walnuts


Mash up Bananas (lightly) with fork (dont over mash!!) You can leave some chunks. Then add in egg, vanilla, yogurt,coconut oil- whisk up quick, no more than 1 minute. Then add in dry ingredients! Stir only 1 time at the end of combining. And add in Walnuts at the very end!

Pour into lined muffin tins, this made 10 muffins!!!

Bake at 375 for 14 minutes.
