1 tablespoon of coconut oil (melted)
1 egg
1 teaspoon of vanilla extract
1 cup of unsweetened applesauce
1 tablespoon of Greek yogurt
2 tablespoons of Truvia or sweetener of your choice
1 1/4 cup of oats flour
1/4 cup of oats
1 teaspoon of baking powder
1 teaspoon of baking soda
Pinch of salt
1/2 tsp of cinnamon
1/3 cup crushed walnuts
1/2 cup mixed berries (I used strawberry and blueberries chopped)
Combine wet ingredients, stir together then add in dry ingredients and stir, then add in the nuts and fruit.
Pour into greased muffin tin.
Makes 1 dozen
Bake at 350 for 15 mins!
