Blueberry Walnut Baked Oatmeal
2 dates
1/3 c truvia
1 egg
1 banana
2 tsp of cinnamon
1/4 tsp salt
3 c boil water
1 1/2 c steel cut oats
1tbsp coconut oil
1 1/2 cups of milk
2 cups of blueberries
1/3 cup of Walnuts (chopped) crumbled on top
Put everything except the oats, boiling water, and blueberries in your Vitamix or blender. Add the boiling water to a bowl with the oats in it. Let sit and soak up water. Then add in the wet mixture. Lastly, add in the blueberries and pour in greased 13×9. I also had some left over to add int 4 ramkins. But you should have room to put all batter in 13×9 if desired!
Bake at 375 for 45-50 mins
