These chocolate chip cookie dough bites are seriously to die for. I’ve always been a chocolate chip cookie kind of girl. Growing up my mother would bake an assortment of cookies, PB, double chocolate etc. She always let me lick the beaters clean of cookie dough every time we baked together. I usually licked the bowl clean, that was one of the best parts. Cookie dough is just too delicious, so I decided to recreate using more health conscious ingredients!
Cookie dough bites
1 15.5 oz can of Garbanzo beans
3 tbsp coconut oil
1 tsp vanilla extract
1 tbsp water
1/4 cup Brown sugar
1 tbsp +1/2 tbsp of stevia (I use Truvia)
1/2 cup oat flour
1/4 tsp salt
1/3 cup chocolate chips
1/3 cup chocolate chips melted (optional)

Combine the first 4 ingredients in a blender. I used my vitamix as this dough is pretty thick and the beans need to be fully blended. The wet ingredients should help with the blending. After the beans are fully obliterated into mush, spoon into a bowl and begin adding the sweeteners and dry ingredients. After all is blended together add in the 1/3 cup chocolate chips. I used half chips and half chocolate chunks. Next, place the dough in the freezer for 15 mins to stiffen it. Grab a spoonful of the dough and roll into balls. Lastly, If you would like half of the bites coated in chocolate, melt the last 1/3 cup of chips and mix with 1 tsp of coconut oil to unthicken the chocolate for dipping. Dip each ball half into the melted chocolate, place on parchment paper. After all are rolled and dipped store in the refrigerator!
Makes 20 bites. Consume within 3 days or freeze.
