4 Tbsp coconut oil
1 1/2 tsp vanilla extract
2 Tbsp cashew butter
3 Tbsp milk
2 Tbsp water
1 egg
1/4 c truvia (or your favorite sweetener)
3/4 cup oat flour
1 1/2 tsp baking powder
1 tsp baking Soda
1/4 tsp salt
2 Tbsp sprinkles

Preheat oven to 325

Directions: Big Bowl-Melt coconut oil in microwave for 30 seconds, mix in vanilla, milk, truvia, water and stir. Next add in egg and cashew butter and stir. Now add in the dry ingredients- flour, baking powder, soda, salt and stir. Lastly, stir in the sprinkles.
Spray a mini muffin tin, spooning in enough to fill halfway.
Bake at 325 for 12-15 mins
Recipe makes 20 mini cupcakes
Let the cupcakes cool before taking out of the tin!!
