Processed with VSCOcam with t1 preset

 

Protein Pineapple Coffee Cake
1 egg
1 tsp of vanilla
1/2 cup of drained pineapple juice
1/2 cup of milk
1/3 cup of Truvia baking mix or stevia
1 can of crushed pineapple(drained, save the juice!)
1  1/2 cups of oat flour
1/2 cup of vanilla protein powder (I used Cellucor!!)
1 1/2 tsp of baking powder
1/2 tsp of baking powder

Crumble topping
2 tbsp oats
2 tbsp of oat flour
1 tbsp brown sugar
1 tsp cinnamon
Dash nutmeg

Combine the first 5 ingredients in a bowl and whisk together!!

Then add in the dry ingredients and combine

Pour in a greased 8×8 pan and Top with the crushed pineapple.

Then finish it off with the combined crumble topping.

Place in the oven at 350 for 50 mins.
