Pumpkin Protein Bread
2 eggs
1 can (15oz) pumpkin Puree
1 1/2 tsp vanilla extract
2 tbsp coconut oil
1/2 cup of 0% Greek Yogurt
1/3 cup + 3 tbsp Truvia Baking Sweetener Blend
2 cup oat flour
1 scoop of Whey Protein Powder (I used cellucor Cinnamon Swirl)( *you could omit this & add 1/4 cup extra oat flour instead)
1/2 tsp Salt
2 1/2 tsp Pumpkin Pie Spice
1 tsp Baking Powder
1 tsp Baking Soda
Preheat oven to 350!
Combine the first 3 ingredients, and add in greek yogurt & truvia and mix together!
Then add in all of the dry ingredients, stir!!!
Then add in the melted coconut oil last and MIX!
Pour into a greased loaf pan
Bake for 50-55 mins!!
