Pumpkin Protein Scones:
1/3 cup truvia or Truvia baking sweetener blend
1 egg
1 tbsp coconut oil
3/4 cup pumpkin puree
1 1/4 cup oat flour
1/4 tsp salt
1 scoop whey protein powder (I used cellucors Cinnamon Swirl)
2 tsp baking powder
1/2 tsp baking soda
1 tsp pumpkin pie spice
Glaze:
1/3 cup of greek yogurt plain
1/2 tsp of vanilla extract
2 tsp of truvia
Combine all the wet ingredients and mix!! Then combine the dry and add it to the wet, and mix.
Bake at 400 for 12-14 mins
For the Glaze: Combine ingredients and put into a sandwich or Ziploc bag and cut a small hole as the end to squeeze out the glaze all nice and fancy. 😉
