So, I’ve been on this Zucchini kick lately! This recipe is great for a dinner of 3 or 4! I made this for part of my meal prep for the first part of the week. It’s super easy! Enjoy!

24 count Large-jumbo Shrimp

5 small Zucchini

1 Yellow Pepper

1 Orange Pepper

2 Tbsp Garlic Powder

2 tbsp Chopped dried Onion

2 tsp Black pepper

1 1/2 tsp salt

Olive Oil (to taste)

(Add the spices to taste)

Grease a cookie sheet with olive oil. Preheat the oven to 400 degrees. Spiralize the Zucchini, and place on the cookie sheet. If you don’t have a spiralizer just chop the Zucchini in thin sticks. Add half the garlic and spices on top of the zucchini and bake in the oven for 5-7 mins. Drop the temperature of the oven down to 375 and remove. De-shell the shrimp place on top of the zucchini and dice the peppers in cubes and place on top of the shrimp. Now, Sprinkle more of the spices on top along with a fair helping of olive oil. And place in the oven for 22 mins! Enjoy!
