1 15oz can garbanzo beans
1/4 cup coconut oil melted
2 tsp vanilla extract
1/4 cup water
1/4 cup truvia or your favorite sweetener
3/4 cup oat flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/4 cup Strawberry jelly (I used half of Trader Joe’s organic low sugar and half of smackers fruit & honey)
Preheat oven to 350
Drain the beans, put into a blender until smooth, I add in the egg, vanilla, water and coconut oil for smoother blending process.
Scoop batter into bowl and add in the truvia and the rest of the dry ingredients. Stir.
Grease an 8×8 and scoop batter in evenly distributing. Lastly, add the jelly in scoops evenly around, cutting and swirling the jelly into the batter.
Bake for 25-30 mins
