Stuffed Acorn Squash
Cut acorn Squash in half, spoon out seeds,and cook at 400 for 40 mins. Dice up 3 chicken breast and Saute on stove top, season with pepper, garlic ;set aside. Saute 1 green pepper and 2 small shallots, until golden. Add in 1 can of diced tomatoes and 1 can of black beans, add chicken back in and heat over stove top. Fill in both half hollowed squash with mixture. Can top with 1/4 cup Low Fat Mozzerella Cheese.
