3-4 zucchinis
1 1/2 cups oat flour
1 cup grated Parmesan cheese
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp black pepper for spicy fries,cut in 1/2 for no spice
1 tsp salt
1/2 tsp oregano
2 eggs
1/3 cup low fat milk
These fries require a little elbow grease, but definitely worth the work! I made this for meal prep for the week, so the recipe is pretty large. Cut in half for a meal of a couple people.
First cut up 3-4 zucchinis length wise into fry shapes.
Then mix eggs and milk into a medium size bowl, whip it up (set aside).
Now, mix in a larger bowl the remaining ingredients.
Lastly, grease a cookie sheet.
Preheat oven to 425.
Dip each zucchini into the egg mixture and then roll into the flour mixture, and now place on the greased cookie sheet, (I tried 1 batch on greased cookie sheet, and another on a greased cooling rack, (show above), each came out the same after cooking, so the cooling rack I feel is unnecessary.) Bake for 25-30 mins. Then broil on low for a clue mins for more of a crispy fry!
