So, last Saturday I took a Spices cooking class at the French Culinary Arts Institute! It was such a fun experience!
First we made Caramellos with Sage Brown Butter
For our next entree we made Salmon en Papillote & Curried Vegetables
For this entree you will preheat the oven to 350. Lay out a piece of parchment paper folded in half. Now cut the paper with scissors into a heart shape.- Put aside. Now chop up 1 Red pepper,1 carrot, 1 parsnip, and 1 cup cauliflower. Stir fry these veggies in a large pan with olive oil 1/4 tsp of curry,1 tsp of ginger, and a pinch of salt. Add in 2 tbsp of raisins.
Now for the salmon..
Salmon should be cut on a diagonal and skinless, rub on black pepper, turmeric, cumin, and coriander.
Now take the parchment paper and place the veggies on one side of the heart, and now place the salmon on top. Squeeze half of a lime And a dash of white wine on top of the veggies and salmon. Seal up the sides of the heart with egg white, and roll the sides so there is no openings.
Bake for 10 mins @350!! Done!
To finish, for dessert we made Spiced Red Wine Poached Pears with Tahitian Vanilla Cream
I would recommend taking a cooking class for any newbies looking to get into cooking! The chef was great and very knowledgeable!
